If blueberries are nature’s Skittles, coconut water nature’s Gatorade, then dates would be nature’s snickers.
Dates are one of my favorite snacks to have if I’m ever craving something sweet. Unless I’m having “one of those days” like I talked about here, dates wouldn’t cut it. I’d have to bring out the heavy artilary and trek to the candy store for a potpouri bag of sour-flavored gummies.
However, when I’m not having “one of those days” but still want something sweet, dates are my buddy. Only thing is, since they are nature’s Snickers they pack a hefty dose of sugar, and if eaten alone can send you into blood sugar debacle.
To avoid this, it’s best to pair the dates with a form of protein and fat. Which is exactly what I did for today’s recipe. But, I cannot take the credit on this one. I have to give that to Jen Sinkler who posted the idea on Instagram. I just fancified it by adding the goat cheese inside the date. So rather than thank me for the yumminess, thank her, @jensinkler. Welcome, the meat-lovers ultimate pocket snack: Dates stuffed with goat cheese wrapped in prosciutto. Please consume wisely.
Ingredients:
- Dates
- Goat cheese
- Proscuitto
Directions:
1. Cut open the dates and remove the pits.
2. Add a nice tip-of-the-knife glob of goat cheese into the date but not too much that you can’t close it.
3. Cut a small strip of prosciutto and wrap around the date.
4. If you actually have any left over after you make them, place in a container in the fridge to eat as a snack.
